1 1/2 cups all-purpose flour
3 tablespoons sugar
1 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk (or 1/4 cup plain yogurt, ¾ cup milk)
2 large eggs
1/4 cup melted butter
In a large mixing bowl, mix all dry ingredients together. Whisk to break any lumps.
Whisk in buttermilk (or yogurt/milk mixture), eggs, and melted butter just until combined.
Heat a large pan or griddle over medium-high heat. Lightly grease the pan and add 1/4 cup of batter. Let cook until bubbles form on the top side of the pancake before flipping.
Cook on the other side until golden brown. Serve hot with your choice of jam, maple syrup, soft butter or all of the above. Happy Breakfast!
