Gratin Dauphinois
1 kg potatoes, Idaho or similar
2 cups 35% cooking cream
1 cup grated parmesan (or similar)
2 teaspoon salt
½ teaspoon black pepper
¼ teaspoon ground nutmeg
2 eggs

Preheat oven at 375*F.
Wash potatoes and scrub the skin. Slice the potatoes into thin 1/8 inch slices. In a large bowl mix in cream, salt, pepper, nutmeg, parmesan and eggs. Add potatoes and toss until they are all coated.
Line an oven safe dish with the potatoes and every other layer sprinkle some grated parmesan. Repeat until all the potatoes are placed. Cover with Aluminum foil and cook for about 1.5 hours. 15 minutes before they are done, remove aluminum foil to allow then to broil and form a nice golden crust.
