Recipe:
(makes 2)
2 tablespoons flour
2 tablespoons butter
350 ml milk
1 teaspoon salt
½ teaspoon pepper
¼ teaspoon nutmeg
2 tbsp butter
4-6 slices jam
4-6 slices of cheese (Gruyere or similar)
4 tablespoons grated parmesan
For the sauce, melt butter in a small pan, add flour and cook until it turns into a golden paste.
Slowly add milk , stirring constantly so no lumps form. Cook until it thickens. Add salt, pepper and 2 tablespoons of the parmesan. Let cool.
Make the sandwich.
Preheat the oven to 400*f. Spread all 4 bread slices with butter, distribute jam and cheese evenly in them and close both sandwiches. Place them in a baking sheet and top with the bechamel and then the leftover parm. Nake until they turn golden brown. Et voila! Croque monsieur, you want a madame? Add a fried egg on top!
