A MONTREAL TWIST ON BREAD PUDDING !

What exactly is bread pudding ? Technically it is any left over bread you may have around your home or in our case, fresh bread that didn’t sell on the same day or day after ( which we offer at the front of the store at a discount. )
We hate waste as everyone does, so this two day old bread gets transformed into one of Quebec ‘s favourite desserts. By adding cream, sugar and rum plus a whole host of secret ingredients ( see our recipe here ) a stomach pleasing comfort snack is created.
Now what makes FOU Bread Pudding so special ? Well one of our secret ingredients is the famous Montreal Bagel !
By adding this already sweet, oven cooked bagel complete with sesame seeds we have added a layer of Middle Eastern meets Montreal vibe to a dessert celebrated worldwide.
900 gr old bagels ( cut into pieces )
125 gr raisons
125 gr orange peel
2L 15% cream
60 gr butter
750 gr sugar
30 ml vanilla extract
125 ml Rum ( spiced)
2 tspns ground cinnamon
1/2 tspn ground cardamom
1) Preheat over to 350 C. combine/whisk all wet ingredients in a large pot on medium high heat. Just before boil, remove from heat.
2) Incorporate the dry ingredients into the wet.
